Lindsey's Chicken Lettuce Cups:
Baby Cos Lettuce 500g Mince (Chicken, Turkey or Pork is best)
2 x Tbs Soy Sauce
1 x Tbs Brown Sugar
1 x Spring onion – cut in half (chop white end into small pieces, slice green end on angle)
1 x Clove crushed garlic
1 x Carrot (peeled into ribbons – whole carrot). I also cut the ribbons a few times so they are easier to mix later
Fresh Coriander Sweet Chilli Sauce
** You may also wish to add extra chopped vegies such as capsicum, baby corn, mushroom etc – completely up to your own tastes
Combine mince, soy sauce, brown sugar, garlic and white portion of spring onion into a bowl.
Use fork or hands to mix together until combined well.
If you have time, put mixture into fridge for an hour or more to marinate (not essential though...)
Wash lettuce and break off leaves – they will be used as the cups
Cook mince mixture in frypan over medium to high heat until mince is cooked through. Add carrots, green part of spring onion and any other vegetable you have decided to add. Heat through for 1-2 minutes.
Spoon mixture into lettuce cups
Drizzle sweet chilli sauce on top and add chopped coriander
Voila! Serve & Enjoy!
